Today’s recipe is a tasty & healthy corn salad with a mix of a few other fresh ingredients. This corn salad is not only easy to make but also is customizable in uncountable ways!
You can throw in any other ingredients of your choice and make it your signature corn salad; for example cooked kidney beans or black beans for a plant-based protein-rich salad or cooked shrimps if you are a seafood lover!
What is healthy corn salad?
Corn salad, as you can easily guess from the name, is the quickest corn salad that you can make by tossing just a few fresh ingredients with nicely steamed sweet corn kernels! Corn being the dominating ingredient of this salad, you call this one the healthy corn salad!
This salad is made with the freshest of ingredients and hence I have kept the dressing just minimal; only a dash of lemon juice is what you need to make this delicious salad and of course the seasoning!
All the beautiful ingredients in corn salad create a perfect rainbow platter! The sparkling yellow from corn kernels, red from tomatoes, green from cucumber make this a super tempting salad that is highly palatable, which means this is a sure-shot crowd pleaser!
Ingredients for healthy corn salad
Sweet corn: Since this is a corn salad, the star ingredient has to be the vibrant sweet corn! Frozen sweet corn is easily available in any supermarket these days and I recommend keeping a bag handy as it cooks really fast and you can make this corn salad in a jiffy!
Cucumber: To accompany the sweet corn and to enhance the fiber quotient of this corn salad, add a chopped cucumber. You can use a European cucumber which I prefer too as you won’t need to peel it.
Tomato: This bright red ingredient not only adds nutrition but also helps create a rainbow platter in combination with bright yellow corn kernels.
Red onion: Add a crunch to your corn salad by adding in a finely chopped small onion. About 4 to 5 tablespoons of chopped onion will do the trick in this salad as you won’t want to overpower the salad with onion flavors.
Carrot: To enhance the nutrition quotient of this vibrant salad, I added finely grated carrots which are high in beta carotene. I usually don’t like raw carrots, but when you grate them finely, they mingle with the salad without overpowering it and you get all the benefits from them without even realizing it!
Lemon: This delicious salad doesn’t require any fancy salad dressing! Just a drizzle of freshly squeezed lemon juice is what you need in this simple weightloss corn salad. The simplicity is what makes this one most appealing!
Salt and pepper: Season your salad well with salt, preferably pink salt, and freshly ground black pepper!
How to make healthy corn salad?
Step 1: First we will be steaming the sweet corn; you can use either fresh or frozen sweet corn. Take a steamer and add the sweet corn to the steaming basket. Place the basket on top of a pot of boiling water.
Step 2: Let the sweet corn steam on medium flame for 15 minutes or until the corn turns soft & tender.
Step 3: Transfer the corn to a large mixing bowl and set it aside while it cools down a little and you prepare the remaining ingredients.
Step 4: Chop the cucumber into small pieces. If you are using European cucumber, then you won’t need to peel it.
Step 5: Chop the tomatoes into small pieces; finely chop the onion and grate the carrot. Squeeze the juice of lemon and set it aside.
Step 6: Add all the prepared ingredients i.e. cucumber, tomatoes, onion and carrot into the bowl with steamed corn.
Step 7: Drizzle half of the lemon juice over the corn salad ingredients. Season it with salt and pepper to taste.
Step 8: Using two spoons or a pair of salad forks, start mixing the corn salad ensuring the seasoning is distributed evenly and each ingredient is coated with lemon juice and salt & pepper.
Step 9: Do a taste test at this point. If you feel your corn salad is not tangy enough then drizzle the remaining lemon juice and give a final mix!
Step 10: Your corn salad is ready! But before serving, cover it with a cling wrap and leave it at room temperature for at least 30 minutes allowing the ingredients to absorb the flavors from lemon juice and seasoning.
Step 11: Finally serve your super-fresh corn salad as an evening snack or as a healthy side along with your grilled chicken! Enjoy!
