What is Spicy Baked Chicken Wings?
This is one of the earliest chicken wings recipes that I had made back in the days when I was just starting to build up my blog and scanning through interesting recipes on the net.
After looking at numerous chicken wings recipes, I got hooked to this one from The Endless Meal and oh boy! What a stunner this spicy baked chicken wings recipe proved to be!
And it was so easy to make, which was perfect for a beginner cook like me 10 years ago! I decided to recreate this now as we wanted to relive those days and become nostalgic! (And also getting better photos as a secondary objective!)

This recipe is exactly what its name says – baked chicken wings coated with a spicy sauce. You simply bake the wings first and then toss them up in a spicy sauce of your choice!
I used Schezwan sauce for making the spicy sauce to coat my baked chicken wings. Schezwan sauce has a very strong flavor with a lot of spicy kick, so use it sparingly. And if you are not into that much heat, use any other hot sauce of your choice and the result will be equally pleasing.
The bottled sauces are already added with some amount of sugar which when comes in contact with heat, become sticky and cling to the food it is tossed with and that’s exactly what you are looking for.
The sticky goodness makes your baked chicken wings even more addictive and you won’t be able to stop at just two or three!
I made a mistake by making a small batch of these baked chicken wings and I strongly suggest you not to do the same. If you are making it for your gang, make a huge batch! And I mean H-U-G-E!
You can estimate a pound of chicken wings per person and I am not exaggerating! No one will even look at anything else in the menu when you serve these spicy baked chicken wings before them, so you can pretty much consider these as dinner and keep your arsenal well filled up!
Trust me, no matter how large a batch of these spicy baked chicken wings you make, you will still fall short and there will still be a few disappointed grunts in the gang! This is that good!
Ingredients for Spicy Baked Chicken Wings
Chicken wings: You will need a good amount of chicken wings if you are planning to make it for a group. Cut your wings into drumettes and wingettes and discard the wing tips or save for making chicken stock. If your chicken wings are frozen, make sure to thaw them completely before baking.
Oil: You will need to coat your chicken with oil so that they turn out crispy. You can use olive oil which will add a good flavor also or any other vegetable oil of your choice.
Salt & Pepper: Season the chicken wings well with salt & freshly crushed black pepper while you put them into the oven for baking.
Unsalted butter: To make the sauce, butter is one of the two primary ingredients. I recommend using unsalted butter as the sauce itself is also salty.
Schezwan sauce or any Hot Sauce: The second primary ingredient for the spicy sauce is any choice of hot sauce. You can use Schezwan sauce, hot buffalo sauce, Louisiana hot sauce or any other.
Cilantro or parsley: Use a fresh herb to garnish while serving. This adds an extra dimension to your dish!
How to make Spicy Baked Chicken Wings?
Step 1: First prepare your chicken wings by splitting them into drumettes, wingettes and wing tips. You can reserve the wings tips for making chicken stock later. Wash and pat dry the wing pieces.
Step 2: Preheat the oven to 200 C / 400 F. Line a rimmed baking sheet with aluminum foil or parchment paper. Place a grilling rack on top of the baking sheet. We will bake the wings on the grilling rack which will make them extra-crispy and any drippings will fall on the aluminum foil (or paper) that will give us easy cleaning.
Step 3: Take the chicken wings in a large bowl and toss with oil, salt and freshly cracked black pepper. Toss well making sure each piece is coated evenly with oil and seasoning.
Step 4: Place the chicken wings on the grilling rack on top of the baking sheet in a single layer. Do not put any wing on top of another.
Step 5: Bake the chicken wings in the preheated oven for 40 to 45 minutes or until the wings are quite crispy. You may need to flip them over after 25 minutes to ensure both sides turn out crispy.
Step 6: While the wings are baking, prepare the sauce. Melt the butter in a large frying pan [big enough to hold all the chicken wings] over medium high heat.
Step 7: Add the Schezwan or the hot sauce of your choice and whisk to combine. The sauce will become glossy and vibrant as well as sticky. Splash a few tablespoons of water to dilute the sauce. Let it come to a boil.
Step 8: When the chicken wings are nicely baked, take them out from the oven and add them to the frying pan with sauce. Toss the pan to coat all chicken wings well with the sauce.
Pro tip: You can enjoy your spicy baked chicken wings immediately after the last step above; but to take it to the next level, I did something extra this time! Read on!
Step 9: Remove the grilling rack from the baking sheet which was lined by aluminum foil. Now transfer all the sauce coated chicken wings to this baking sheet and spread them out to arrange in a single layer.
Step 10: Return the baking sheet with wings back to the oven and bake them for exactly 5 more minutes. This extra 5 minutes in the oven will transform the chicken wings making them even more crazier and super addictive as the sauce will cling firmly to the wings!
Step 11: Your wings are done! Serve the spicy baked chicken wings garnished with freshly chopped coriander (aka cilantro) or parsley along with your favorite dip on the side!
