Ingredients
  • Chicken wings – 15 to 20
  • Olive oil or any vegetable oil – 1 tbsp
  • Salt & black pepper to taste
  • Unsalted butter – 2 tbsp
  • Schezwan sauce – ½ cup (Adjust based on your choice of sauce and level of desired heat)
  • Cilantro or parsley to garnish
Instructions
  1. Preheat the oven to 200 C / 400 F. Line a rimmed baking sheet with aluminum foil or parchment paper. Place a grilling rack on top of the lined baking sheet.
  2. Wash and pat dry the chicken wings thoroughly. Place the chicken wings in a large bowl and toss with oil, salt and freshly cracked black pepper.
  3. Place the chicken wings on the grilling rack in a single layer. Bake them in the preheated oven for 40 to 45 minutes or until the wings are quite crispy. You may need to flip them over after about 25 minutes.
  4. In the meantime, prepare the sauce. Melt the butter in a large frying pan [big enough to hold all the chicken wings] over medium high heat.
  5. Add the Schezwan sauce and whisk to combine. Add a few tablespoons of water to dilute the sauce. Let it come to a boil.
  6. When the chicken wings are nicely baked, remove from the oven and add them to the sauce. Toss the pan to coat all chicken wings well with the sauce.
  7. To take the wings to the next level, transfer the sauce coated chicken wings to the lined baking sheet (not the grilling rack this time) and arrange in a single layer.
  8. Return the baking sheet back to the hot oven and bake them for 5 more minutes. Your spice baked chicken wings will turn sticky and irresistible.
  9. Serve the spicy baked chicken wings garnished with freshly chopped cilantro or parsley along with your favorite dip on the side. Enjoy!
