And today I am starting to celebrate this mango season with this stunning vegan mango chia seed pudding!

Chia pudding has gained immense popularity of late especially among the fitness enthusiasts like us who aim to hit two targets with one stone!
Firstly, incorporating the superfood chia seeds via this healthy chia pudding allows us to absorb all their nutritional benefits while keeping us full for a longer time.
Secondly, the sweet chia seed pudding keeps our sweet cravings in check without putting loads of sugar into our bodies, preventing us from consuming unnecessary empty calories!
When you combine this already delicious and wonderful chia pudding with another magnificent ingredient that is mango, you can easily imagine that the outcome would be undoubtedly phenomenal!
That’s exactly what this mango chia seed pudding is!
As a cherry on the icing, the thick & creamy coconut milk not only makes this a vegan version of chia pudding, but also complements the flavor of the mangoes in an outstanding way!

Ingredients for Mango Chia Seed Pudding
Mango: It goes without saying that mango is the showstopper ingredient in this mango chia seed pudding!
But, to make a perfect mango chia pudding, you need to be careful with your selection of mangoes. First, please note that you DO NOT need the fanciest and most expensive variety of mango for this.
All you need are nicely ripe mangoes which are naturally very sweet and available in abundance in your local market.
The variety of mango that I used in my mango chia seed pudding is called “Mallika” which is not only sweet in taste but also has a smooth & soft texture with minimal fiber. And of course, it is a very common variety of mango in my city.
Coconut milk: To be honest, I didn’t originally plan to make a vegan mango chia seed pudding! It’s only because I love the flavor combination of mango and coconut that I ended up with this vegan version of mango chia pudding!
And thank God I did, because in my humble opinion mango with coconut milk is a match made in heaven!
Coconut milk has a natural & subtle sweetness and is creamier in texture than dairy milk; due to such unique properties of coconut milk, this vegan mango chia seed pudding turns out wonderfully delicious & irresistible (literally!)!
If you can make fresh coconut milk at home, then nothing like it! But I understand that it is an effort-intensive and time consuming process; hence you can use this unsweetened coconut milk that I got from amazon.
Raw chia seeds: Next comes the super seed which is the heart of this mango chia pudding and also every fitness enthusiast’s best friend these days! Yes, I am talking about our most-loved chia seeds!
A powerhouse of nutrients, these tiny seeds have this extraordinary liquid-absorbing capacity making them thick and gelatinous which is perfect for a pudding texture.
If you are looking for different ways to include chia seeds in your diet, this mango chia seed pudding is a fantastic option to opt for!
This will not only let you incorporate chia seeds in your meals, but also will allow you to relish this seasonal king of fruits in an innovative way!
Sweetener of your choice: This recipe of mango chia seed pudding is very forgiving in the sense that you can use any sweetener of your choice! How cool is that!
If you don’t mind consuming sugar, feel free to use it. But my personal recommendation would be to add honey, liquid jaggery or maple or agave syrup to avoid the empty calories of sugar.
Just keep in mind that using jaggery may alter the color of the chia pudding making it slightly yellowish.
How to make Vegan Mango Chia Seed Pudding?
Step 1: In a mixing bowl, add coconut milk and raw chia seeds. Mix the chia seeds with the milk using a spoon stirring slowly making sure all the chia seeds go inside the liquid.
Step 2: Cover the bowl and chill in the refrigerator overnight.
Step 3: Next day, take the bowl out and slowly stir the chia seed pudding. By now, the chia seeds have swelled up and become thick and creamy.
Step 4: Now you have to add the sweetener. If your bowl is large enough, add the sweetener of your choice to the same bowl and mix.
Else, you can transfer the chia pudding to a larger mixing bowl and add the sweetener. It will be easier to mix.
Using a fork or a wire whisk, evenly mix the sweetener making sure that it is distributed uniformly within the chia pudding.
Pro tip: I have not mentioned the amount of sweetener that you will need as it totally depends on the particular sweetener you are using.
Best way to do this is to taste your chia pudding after adding & mixing about 2 to 3 tablespoons of the sweetener and then adjusting by adding little at a time in installments until you reach that perfect sweet spot!
Step 5: Once the chia pudding is nicely sweetened, put it back in the refrigerator while you prepare the mangoes.
Step 6: Wash the mangoes well. Then cut the sides of the mangoes and scoop out the flesh using a spoon.
Step 7: Put the mango flesh to a blender and blend them for a good 2 to 3 minutes to get a smooth, thick, creamy & lump-free mango pulp/puree. Do not add any water.
Pro tip: If your mangoes are very sweet, do not add any sweetener. The mangoes that I had used were very sweet, so I didn’t need to add any sweetener.
Step 8: Now it’s time to assemble your vegan mango chia seed pudding. Take a single serving transparent bowl or glass or cup.
Step 9: First, add 3 to 4 tablespoons of chia pudding to the serving glass.
Pro tip: Depending on the size of your serving, you may need to add more chia pudding; the idea is to add ¾ chia pudding and top if off with ¼ mango pulp.
Step 10: After you are happy with the quantity of chia pudding, level it evenly using a spoon.
Step 11: Now slowly & carefully drizzle the mango pulp or puree on top of the chia pudding.
Pro tip: If your chia pudding is thick and nicely set, mango pulp will comfortably stay on top and won’t trickle down below presenting you with a stunning mango chia seed pudding!
Step 12: Assemble more servings similarly and then chill them in the refrigerator again before serving.
Step 13: Before serving, cut fresh pieces of mangoes in small bite sized pieces.
Step 14: Take out the chilled mango chia seed pudding, top each serving glass with fresh cut mangoes, garnish with a fresh mint leaf and serve immediately!
