Hi folks! How are you doing? How is your new year unfolding? Are you able to still stick to your New Year resolution and getting closer to that? I am still trying and haven’t lost hope yet! Fingers crossed! Let’s talk about the recipe which I come with today.
Today’s recipe is the perfect winter warmer – hot Thai shrimp noodle soup. This is a meal in itself which not only will satisfy your stomach but also your mind and soul!
Just take a look at the soup and you could believe me easily. I am not bragging about it without any reason. Tell me – can anything with shrimps in it taste bad?
Winter in Bangalore is not severe but the chilly winds take me every year. I go through my share of days with runny nose and sore throats and I know you all will agree with me it feels awful!
Even though I can’t control the breeze, I can protect and warm myself up with this fantastic bowl of Thai shrimp noodle soup which was nothing less than a one pot wonder to me!
Shrimps, for me, are more miracle than just an ingredient. I love everything with shrimps – be it pasta, noodles, biryani.
Obviously it would be a shame if I do not add a fail-proof and absolutely delicious Thai shrimp noodle soup recipe to my blog. Trust me, you guys will simply freak out on this!
My not-a-soup-lover husband fell for this hot Thai soup so much that he skipped the full meal altogether. While making this Thai shrimp noodle soup I was sure that he would not have more than couple of spoons which is why I kept a pasta ready for dinner.
But that pasta was left untouched and I could not save the soup for myself for the next day which I had originally planned! I wish I could show you his picture of gulping the very last drop of the soup and then enquiring if I have more! (Moment of rejoice!)
Before leaving you with the recipe of scrumptious Thai shrimp noodle soup, I have to make a confession. I am fully aware that I am not sharing my recipes with all my lovely readers as often as I intent to, but trust me, my current situation is beyond my control. I am trying too hard to get back to the schedule and I am hoping it will happen very soon!

- Medium prawns – 250 gms, peeled and deveined
- Garlic paste – 1 tsp
- Thai red curry paste – 1 tbsp
- Grated ginger – 1 tsp
- Garlic – 2 cloves, grated
- Lemongrass stalk – 3, small
- Kaffir lime leaves – 3 (I used dried, you can use either fresh or dry)
- Brown sugar – 1 tsp
- Fish sauce – 1 tbsp
- Noodles – 50 gms
- Chicken or fish stock – 1 li
- Vegetable oil – 2 tsp
- Salt to taste
- Lemon wedges to serve
- Handful of chopped fresh coriander for garnishing
- Heat a large saucepan or stockpot and add oil to it. Add the peeled and washed prawns and suate it for just 5 minutes until they turn opaque. Take them out using a slotted spoon and set aside.
- To the same saucepan, add the grated ginger and garlic and quickly stir them. Then add the red curry paste and saute for couple of minutes.
- Bash the end of the lemongrass stalk with a heavy spoon or a rolling pin to bring out the maximum flavor. Tip in the lemongrass, kaffir lime leaves, fish sauce, brown sugar to the saucepan and season with salt.
- Then add the chicken (or fish) stock and bring to boil. Once the liquid starts boiling, add the noodles and simmer until the noodles are cooked through and the soup thickens. This would take about 15 minutes.
- Finally add the prawns and let the soup simmer for final 5 minutes and come to your desired consistency. Check and adjust seasoning if needed.
- Serve in bowls, scatter some chopped coriander and serve hot & sour Thai Shrimp Noodle Soup with lemon wedges. Enjoy!
