Ingredients
  • Orzo pasta – 1 & ½ cup
  • Eggs – 4, medium-boiled or as per your liking
  • Cooked chicken sausage – 4
  • Green bell pepper – 1, small
  • Tomato – 2, large
For salad dressing:
  • Olive oil – ⅔ cup
  • White vinegar – ¼ cup
  • Dried oregano – 1 tsp
  • Dried basil – ½ tsp
  • Dried parsley – ¼ tsp
  • Onion powder – ½ tsp
  • Garlic powder – ½ tsp
  • Sugar – ½ tsp
  • Salt – 1 tsp
  • Black pepper – ¼ tsp
Instructions
  1. Cook the orzo pasta in heavily salted boiling water according to packet instructions. Drain and rinse them with cold water. Set it aside.
  2. Cut the boiled eggs into small bite-sized pieces e.g. 1 egg into 10 to 12 pieces. Cut the cooked sausages into small roundels or half-moons. Set them aside.
  3. Cut the bell pepper and de-seed it. Then chop it into small pieces. De-seed the tomato and cut them into ½-inch pieces. Set them aside.
  4. Prepare the salad dressing by mixing olive oil, vinegar, dried oregano, dried basil, dried parsley, onion powder, garlic powder, sugar, salt and black pepper in a small bowl. Whisk them thoroughly to prepare a homogeneous salad dressing.
  5. Now take a large bowl and add all salad ingredients one by one – cooked orzo pasta, boiled eggs, cooked sausages, bell peppers and tomatoes. Toss them lightly.
  6. Now drizzle the salad dressing and toss them using 2 spoons so that all ingredients are mixed with the dressing thoroughly.
  7. Cover with a clingwrap and let the salad chill in refrigerator for couple of hours before serving. Chilling this orzo pasta salad helps develop the flavor more deeply making it more delicious.
  8. Serve the orzo pasta salad with your favorite grilled meat and enjoy your last bit of summer!
