Spicy Grilled Mackerel with Allspice and Paprika

Ingredients
  • Whole mackerel – 2, cleaned
  • Garlic cloves – 6 to 8, minced
  • Ground cinnamon – 1 tsp
  • Ground allspice – 1tsp
  • Dried oregano – 1 tbsp
  • Paprika – 2 tsp
  • Olive oil – 4 tbsp
  • Fresh parsley – ¼ cup, chopped
  • Zest and juice of 1 large lemon
  • Salt and pepper to taste
Instructions
  1. Clean the mackerel and make 3 to 4 cuts using the tip of a knife on both sides of the fish. Sprinkle some salt and pepper on both sides. Set aside.
  2. In a large bowl, combine all other ingredients and give a good mix to make a uniform mixture.
  3. Rub this marinade on both sides of the fish keeping a thick layer. Cover with a cling film and let the fish marinade for at least 2 hours.
  4. Once you are ready to grill, preheat your oven to 200 C / 400 F.
  5. Arrange the marinated fish on a roasting dish and place the dish on the top rack closest to the heating element. Using the broil mode, grill the fish for 20 minutes first, then take them out, flip them over and baste with some oil.
  6. Again, grill the other side using the same broil mode for another 20 minutes or until the fish is cooked and the top of the fish is charred.
  7. Sprinkle some fresh coriander leaves and serve the spicy grilled mackerel with few lemon wedges on the side.
Notes
The amount of marinade produced by the given quantity of ingredients would be enough for 5 to 6 medium sized mackerel. You can store the excess marinade in refrigerator for 10 to 15 days and use it as and when you desire.
