Basil Pesto Roasted Chicken

Ingredients
  • Chicken drumsticks – 6, skin-on
  • Olive oil – 2 tbsp
  • Garlic – 8 to 10 cloves, minced
  • Salt and pepper to taste
  • Basil pesto – 1 cup (Get the recipe here)
Instructions
  1. Wash and pat dry the chicken drumsticks. Make few slashes on the meaty areas of the drumsticks using a sharp knife.
  2. Add minced garlic, basil pesto, salt and pepper to taste to the drumsticks and give a very good mix making sure the marinade goes inside the cuts of the chicken.
  3. Marinade the chicken for 4 hours or overnight in the refrigerator.
  4. When you are ready to roast, preheat your oven to 200 C / 400 F and place the rack at the top most level.
  5. Arrange the marinated chicken on a roasting tin keeping enough gap between pieces. You can line the roasting tin with aluminum foil for easier cleaning.
  6. Brush 1 tablespoon of oil on top of each chicken pieces.
  7. Place the roasting tin on the wire rack at top level and roast the chicken using the broil mode. Roast the chicken for 30 minutes first, then flip them over and brush the remaining oil on top. Finally broil them for another 30 to 35 minutes or until the chicken is cooked through and charred. You can check the internal temperature using an instant-read thermometer and it must register at least 165 F.
  8. Serve the baked pesto chicken warm with some lemon wedges and your favorite beverage!
