Microwave Spicy Potatoes

Ingredients
  • Potato – 4, large
  • Onion – 2, chopped
  • Vegetable oil – 2 tbsp
  • Asafetida (Hing) – ½ tsp
  • Mustard seeds – ½ tsp
  • Cumin seeds – ½ tsp
  • Dry red chillies – 2, broken
  • Curry leaves – 10 to 15
  • Green chilli – 2, broken
  • Turmeric powder – ½ tsp
  • Freshly chopped coriander leaves to garnish
  • Salt to taste
Instructions
  1. Wash and pat dry the potatoes, no need to peel them yet. Using a fork, pierce the potatoes in multiple places. Place the potatoes in a microwave safe bowl half filled with water. Cook the potatoes in microwave on high for 15 minutes. Please note that smaller potatoes will take lesser time to cook, so do check them halfway between the cooking time.
  2. Once cooked, let the potatoes cool down for 10 minutes. Then peel and cut them into small cubes. Set aside.
  3. In a microwave safe dish, add the vegetable oil. Microwave it on high for 2 minutes.
  4. Next add asafetida, mustard seeds, cumin seeds, dry red chillies, curry leaves, green chillies, chopped onion and turmeric powder. Mix everything well. Microwave on high for 2 minutes first, take it out and stir well. Again microwave on high for 3 more minutes. Onions should be soft and translucent by end of this step. If your microwave is of lesser power, cook it for a minute more.
  5. Add boiled potato cubes to the dish and season with salt to taste. Mix well. Microwave on high for 8 to 10 minutes. Give a final mix and the spicy potato is ready.
  6. Sprinkle freshly chopped coriander leaves and serve hot with fulkas or rice.
