Easy Thai Baked Chicken

Ingredients
  • Chicken drumsticks – 6
  • Garlic – 5 to 6 cloves, minced
  • Fresh coriander leaves and stems – ½ cup, chopped
  • Thai sweet chili sauce, for dipping
Marinade:
  • Coconut milk – 2 tbsp
  • Fish sauce – 1 tbsp
  • Brown sugar – 1 tbsp (if you can get your hands on Thai palm sugar, that’s best here!)
  • Turmeric powder – ¼ tsp
  • Cayenne pepper (or red chilli powder) – 1 tsp
  • Vegetable oil – 1 tbsp
  • Salt and pepper to taste
Instructions
  1. Preheat your oven to 190 C / 375 F and place the wire rack at middle of your oven.
  2. Rinse and pat dry the chicken drumsticks. Mix all the ingredients listed under marinade in a bowl and whisk them well to form a pale yellow mixture of quite runny consistency.
  3. Add the coriander stems and minced garlic to the chicken drumsticks and rub with your hand making sure the chicken pieces are nicely coated with aromatics.
  4. Next add the marinade to the chicken, mix to coat well and marinate for 30 minutes or two hours if you have time. Longer you marinade, tastier will be the chicken.
  5. Arrange the chicken on a baking sheet lined with parchment paper and bake for 40 minutes or until the chicken is cooked through. You can check with a meat thermometer if the internal temperature has reached 165 F, then your chicken is fully cooked.
  6. Garnish with chopped coriander leaves and serve your Thai baked chicken immediately with Thai sweet chili sauce.
