Zingy Mushroom Fried Rice

Ingredients
  • White button mushrooms – 200 gms
  • Butter – 1 tbsp
  • Olive oil – 1 tbsp
  • Onion – 1, medium, finely chopped
  • Garlic – 2 cloves, minced
  • Red chilli – 1, chopped
  • Cooked basmati rice – 4 cups (preferably cold)
  • Lemon – 1, grated rind and juice
  • Fresh parsley – handful
  • Salt and pepper to taste
Instructions
  1. Wipe the mushrooms with a kitchen towel to remove all the dirt. I do not wash mushrooms in water as mushrooms are like sponge and absorb too much of water resulting in very soggy dish. Cut the cleaned mushrooms in slices. Set aside.
  2. Heat butter and oil in a heavy-bottomed skillet. Add sliced mushrooms and saute until browned and soft. This would take around 8 to 10 minutes on medium low heat. Take them out and set aside.
  3. Next add the onions to the same skillet and saute until soften for about 5 minutes. Then add the minced garlic and saute for another 5 minutes on medium-low heat.
  4. Finally add the rice, grate lemon rind, salt and pepper to taste and chopped red chillies. Toss the rice to mix everything well.
  5. Tip in the sautéed mushrooms and give a final mix. Serve in a bowl, drizzle the lemon juice and sprinkle the freshly chopped parsley. Serve hot!
