Cajun Spiced Chicken and Potato Bake

Ingredients
  • Chicken legs with thigh – 6
  • Baby potatoes – 500 gms
  • Cajun spice mix – 2 tbsp
  • Garlic powder – 1 tbsp
  • Olive oil – 5 to 6 tbsp
  • Salt and pepper to taste
For Cajun seasoning:
  • Dried thyme – 1 tsp
  • Dried oregano – 1 tsp
  • Cayenne – 1 tsp
  • Garlic powder – 1 tsp
  • Onion powder – 1 tsp
  • White pepper – 1 tsp
  • Black pepper – 1 tsp
  • Paprika – 1 & ½ tsp
Instructions
To make the Cajun seasoning:
  1. Mix all the ingredients listed under Cajun seasoning in a small bowl and give a good whisk. Your Cajun seasoning is ready! Use 2 tablespoons of it in this Cajun spiced chicken recipe and reserve the rest for future use. This spice mix has quite a long shelf life.
To make Cajun spiced chicken:
  1. Preheat the oven at 200 C / 400 F and set the wire rack at the lowest level.
  2. Wash and pat dry the chicken legs. Make couple of incisions into the thick meaty part of the chicken.
  3. Sprinkle 2 tablespoons of Cajun spice mix, garlic powder and salt on both sides of the chicken and rub them really well. Let them sit at room temperature for half an hour.
  4. Wash the potatoes very well to get rid of all muds. Cut each of them into half. Sprinkle the remaining half tablespoon of Cajun spice, 1 tablespoon of olive oil and salt to taste and give the potatoes a good mix.
  5. Heat about 4 tablespoons of olive oil in a saute pan. Once the oil is hot, place the chicken legs and braise them until golden brown on both sides. This will take about 5 minutes per side on medium-high heat. Do not over-crowd the pan as that would lead to steaming instead of braising; you may need to do it in batches.
  6. Once the chicken legs are being braised, coat the bottom of a baking dish with olive oil and keep it ready.
  7. Place the braised chicken legs on the prepared baking dish in a single layer. Tuck in the potatoes between the gaps. Drizzle some more olive oil on top.
  8. Bake the chicken and potatoes in preheated oven for about an hour or until the internal temperature of thickest part of the chicken registers 165 F in an instant read thermometer. You can also cut into the thickest part and if there is no pink left in it and juices run clear, the chicken is cooked thoroughly. Potatoes should have been cooked by now and the cut side nicely caramelized.
  9. Let the chicken sit at room temperature for 10 minutes before serving. Serve your delicious Cajun spiced chicken & potato bake warm and enjoy along with your favorite drink!
