Blueberry Boy Bait Cake | Easy Blueberry Cake Recipe

Ingredients
  • Refined flour (Maida) – 2 cups (285 gms) + 1 tsp, divided
  • Baking powder – 1 tbsp
  • Salt – 1 tsp
  • Butter – 1 cup (235 gms) at room temperature
  • Sugar – 1 & ¼ th cup (250 gms)
  • Eggs – 3, at room temperature
  • Vanilla essence – 1 tsp
  • Milk – ½ cup (120 ml)
  • Yogurt – ½ cup (120 ml)
  • Blueberries – 1 cup, fresh or frozen [if you are using frozen berries, do not defrost first as it tends to muddle in the batter]
  • Granulated sugar – ¼ th cup
Instructions
  1. Preheat oven to 175 degree C (350F). Grease and flour 9″ x 13″ baking pan. This cake is going to be quite big. So make sure you use a big baking pan. If you don’t have the pan of exactly the same size as mentioned, then divide the batter in two separate pans and bake two separate cakes.
  2. In a large bowl, combine the flour, baking powder, and salt. Set aside.
  3. In another large bowl, beat butter and sugars until fluffy, about two minutes.
  4. Add eggs, one at a time, with your beater on.
  5. Add vanilla essence and keep beating until incorporated.
  6. Now reduce the speed to medium and add in one-third of the flour mixture. It is quite possible for the dry flour to powder your face, that’s why keeping the beater speed at low or medium.
  7. Beat in milk and then again half of the remaining flour mixture.
  8. Then add yogurt and finally the remaining flour mixture. Beat well to incorporate everything.
  9. In a small bowl, toss half of the blueberries with remaining one teaspoon flour.
  10. Now gently fold these blueberries into the batter using a rubber spatula. Spread into prepared pan.
  11. Scatter the remaining half of blueberries over the top of batter and sprinkle with ¼ cup granulated sugar.
  12. Bake the blueberry boy bait cake until toothpick inserted in center of the cake comes out clean, approximately 45 to 50 minutes.
  13. Cool in pan for 20 minutes, then turn out and place on serving platter (topping side up).
  14. Serve the blueberry boy bait cake warm or at room temperature.
