Ingredients
For Meatballs:
  • Chicken thighs – 300 gms, boneless & skinless, minced in a food processor
  • Salt - ½ tsp
  • Black pepper - ½ tsp
  • Minced garlic - 2 tbsp
  • Ginger paste – 2 tsp
  • Green or red chilli – 2 to 3, finely chopped
  • Egg - 1
  • Fresh coriander leaves – 1 cup, finely chopped
  • Fish sauce – 2 tbsp
  • Panko breadcrumbs - 1 cup
  • Vegetable oil for shallow frying
For Dipping Sauce:
  • Schezwan sauce: ¼ cup
  • Fish sauce - 1 tbsp
  • Brown sugar - 2 tbsp
  • Juice of one lemon
Instructions
  1. Take the chicken mince in a bowl and add all the ingredients to it - salt, pepper, minced garlic, ginger paste, egg, coriander leaves, fish sauce and panko breadcrumbs.
  2. Now using a spatula, mix all ingredients thoroughly to make a homogeneous dough like mixture. Make sure all ingredients are evenly distributed, so take your time at this stage.
  3. Cover and leave the chicken mince mixture for 30 minutes on your kitchen counter allowing the flavors to develop.
  4. While the chicken is resting, prepare your dipping sauce by whisking all sauce ingredients in a bowl - Schezwan sauce, fish sauce, brown sugar, and juice of one lemon. Set it aside until serving time.
  5. Now you are ready to roll the meatballs. Damp your palms with a tiny amount of oil, take one tablespoon of chicken mince mixture into your palm and roll it out into a ball as shown in the video. Prepare all the meatballs before starting to fry them.
  6. Heat oil in a shallow frying pan. Once the oil is hot, reduce the flame to low and drop the meatballs carefully arranging them in a single layer. Do not overcrowd the pan.
  7. Fry the chicken meatballs on low for 6 to 8 minutes until they are golden brown. Then flip them over and fry for another 5 minutes.
  8. Once the chicken meatballs are golden brown on all sides, take them out using a slotted spoon and place on a plate lined with absorbent kitchen paper to absorb the excess oil.
  9. Your Thai chicken meatballs are ready! Serve them warm with the spicy dipping sauce. Enjoy!
