Airfryer Tandoori Chicken

Ingredients
  • Chicken drumsticks – 6, skin-on or skinless
  • Hung curd – ½ cup
  • Ginger paste – 1 tbsp
  • Garlic paste – 1 tbsp
  • Turmeric powder – ¼ tsp
  • Coriander powder – 1 tsp
  • Cumin powder – 1 tsp
  • Red chilli powder – 1 tsp
  • Kashmiri chilli powder – 2 tsp
  • Homemade garam masala – 1 tsp
  • Mustard oil – 2 tsp
  • Freshly crushed black pepper – ½ tsp
  • Salt to taste (approximately 1 tsp)
  • Organic liquid red food color for vibrant tandoori look – ½ tsp
Instructions
  1. Wash and pat dry the chicken drumsticks. Make couple of deep cuts at the thickest part of each drumstick.
  2. Now take the drumsticks in a large mixing bowl. Add ginger garlic paste and half a teaspoon each of salt and Kashmiri chilli powder. Mix well to evenly coat each piece. Set them aside.
  3. Now prepare the tandoori marinade by mixing all the powdered spices, oil and seasoning with the hung curd using a wire whisk. Make sure the mixture is even without any lumps. Next add the red food color if using. Give a final mix to distribute the color evenly.
  4. Add the tandoori marinade to the chicken pieces and coat each piece thoroughly with spicy yogurt mixture making sure the marinade goes inside the cuts and covers the pieces all over.
  5. Once all the pieces are thoroughly coated, cover the bowl with a plastic wrap and leave it for at least 2 hours.
  6. When you are ready to air fry, set your air fryer at 180 degree C for 20 minutes. Once your air fryer is preheated, arrange the chicken drumsticks inside the basket in a single layer living at least a centimetre gap between two so that the hot air can circulate evenly around each piece.
  7. Start air frying the tandoori chicken and after 10 minutes, stop the fryer, take the basket out, brush the chicken pieces with oil, flip them over, brush other side too and insert the basket again to continue air frying for the remaining duration.
  8. After 20 minutes, check the doneness of the chicken by poking a sharp knife onto the thickest part of the drumstick. If the meat feels tender without any pink left and juices run clear, your tandoori chicken is ready. If not, insert the basket back to the fryer and air fry for 10 more minutes.
  9. Your air fryer Tandoori chicken is ready to serve. Transfer them to a serving platter, sprinkle chat masala on top and serve them with green coriander chutney along with lemon wedges on the side. Enjoy!
