  • All-purpose flour or cake flour – 125 gms (1 & ¼ cups)
  • Baking powder – ¼ tsp
  • Salt – ¼ tsp
  • Regular or Dutch-processed cocoa powder – 1 tbsp
  • Unsalted butter – 57 gms (1/4 cup), at room temperature
  • Granulated white sugar – 150 gms (3/4 cup)
  • Egg – 1, large
  • Vanilla extract – ½ tsp
  • Buttermilk – 120 ml (½ cup)
  • Liquid red food color – 1 tsp
  • White distilled vinegar – ½ tsp
  • Baking soda – ½ tsp
  • Semi-sweet chocolate chips – ½ cup
  1. Preheat oven to 175 C / 350 F and line about 12 muffin tins with paper cupcake liners.
  2. In a large bowl sift together the flour, baking powder, salt and cocoa powder. Set is aside.
  3. In another large bowl, beat the butter until soft using a hand mixer, about 1-2 minutes.
  4. Add the sugar and beat until butter becomes light and fluffy which would take about 2-3 minutes.
  5. Add the egg and beat until incorporated. Scrape down the sides of the bowl. Add the vanilla extract and beat until combined.
  6. In a small bowl or measuring cup whisk the buttermilk with the red food color.
  7. Now to combine dry and wet ingredients, alternately add the flour mixture and buttermilk to the butter mixture beating after each addition keeping the mixer on low speed. It will take three steps, beginning and ending with the flour.
  8. In another small cup mix the vinegar and baking soda. Allow the mixture to fizz and then quickly fold into the prepared cake batter. Don’t leave the batter to sit after adding the vinegar mixture and quickly complete the next step.
  9. Divide the batter evenly among the 12 muffin cups. Sprinkle 1 tsp of chocolate chips over each muffin to cover the top.
  10. Bake in the preheated oven for approximately 18 - 23 minutes, or until a tooth-pick inserted into the center of the muffins comes out clean.
