General TSO's Chicken | My Version of Spicy General TSO's Chicken

Ingredients
For chicken marinade:
  • Chicken thighs – 500 gms, boneless & skinless
  • Egg – 1
  • Soy sauce – 1 tsp
  • Baking soda – 1 tsp
  • Salt – ¼ tsp
For coating the chicken:
  • Corn flour – 1 cup
  • All-purpose flour – ½ cup
For sauce:
  • Chicken stock/water – ½ cup
  • Dark soy sauce – 2 tbsp
  • Shaoshing wine – 1 tbsp
  • White vinegar – 2 tbsp
  • Hoisin sauce – 2 tbsp
  • Red chilli sauce/any hot sauce – 2 tbsp
  • Honey – 1 tbsp
  • Corn flour – 1 tbsp
Other ingredients
  • Dry red chili – 8
  • Garlic – 10 to 12 cloves, coarsely chopped
  • Ginger – 2-inch piece, julienned
  • Spring onion – 5 stalks, finely chopped
  • Vegetable oil – 2 tbsp for sauce + enough for deep frying the chicken
Instructions
  1. Cut the chicken thighs into small bite-sized pieces. Take them in a bowl and add egg, soy sauce, baking soda and salt. Give a good mix and let the chicken marinate for 30 minutes while you prepare other ingredients.
  2. Prepare the sauce by mixing all the ingredients listed under sauce in a bowl – Chicken stock/water, soy sauce, Shaoshing wine, vinegar, Hoisin sauce, hot sauce, honey and corn flour. Make sure all items are mixed well to make an even sauce.
  3. Now heat oil for deep frying the chicken in a deep wok. Mix the corn flour and all-purpose flour in a shallow bowl by giving a good mix using a fork.
  4. Transfer the marinated chicken along with all the liquid to the flour & corn flour mixture. Toss the chicken pieces into the flour mixture to coat each piece with flour on all side.
  5. Now drop the chicken into hot oil and fry them until they become golden brown & crispy and completely cooked through. It would take about 6 to 8 minutes on medium flame. Do not overcrowd the wok while frying; you may have to fry the chicken in batches.
  6. Once the chicken pieces turn golden brown, take them out and place on a plate lined with absorbent kitchen towel.
  7. Now heat a wok and add about 2 tablespoons of vegetable oil. Once the oil is very hot, add chopped garlic, ginger juliennes, dry red chillies and stir fry them on high for a minute or until they are fragrant.
  8. Now pour the prepared sauce into the wok; make sure to stir the sauce before pouring into the wok as cornflour tends to settle down at the bottom of the bowl when left to rest.
  9. Stir in the sauce to mix well with ginger, garlic and red chillies. As soon as the sauce starts to bubble, throw in the fried chicken pieces and stir to mix them well with the sauce. Make sure each chicken is evenly coated with the sauce on all side.
  10. Sprinkle freshly chopped green onions on top and give a final stir. Your spicy General TSO's chicken is ready to serve! Enjoy!
