15-Minutes Grilled Chicken Thighs with Creamy Mashed Potatoes

Ingredients
  • Chicken thighs – 500 gms (boneless & skinless)
For spice blend –
  • Salt – 1 tsp
  • Pepper – ½ tsp
  • Garlic powder – 1 tsp
  • Onion powder – 1 tsp
  • Cayenne pepper – 1 tsp
  • Italian seasoning – 1 tsp
  • Cumin powder – 1 tsp
  • Olive oil – 4 tbsp
Instructions
  1. Wash and pat dry the chicken thighs. Try to dry the thighs as much as possible. Lay them on a plate in single layer.
  2. Take all the ingredients listed under spice blend in a bowl and mix thoroughly using a small wire whisk or a fork making sure to make a uniform & thick spice mixture.
  3. Now brush this spice mix on top of the chicken thighs thoroughly coating all over. Flip the thighs over and brush the spice mixture on other side too.
  4. Ensure the chicken thighs are thoroughly coated with the spice blend including all the nooks and crannies. Transfer them to a bowl, cover with cling wrap and let them chill in refrigerator for at least 2 hours or preferably overnight.
  5. When you are ready to grill, take the chicken out of refrigerator at least 30 minutes prior to grilling.
  6. Heat a grill pan over high heat and brush some olive oil over it. When the pan is smoking hot, reduce the flame to medium and place the chicken thighs over the hot grill pan.
  7. Make sure the chicken thighs are on single layer and not on top of each other. Let the chicken thighs grill without disturbing them for 5 to 6 minutes. This will help develop the beautiful grill marks.
  8. Flip the chicken over after 6 to 7 minutes and let the other side grill for another 6 to 7 minutes. Check the doneness of the chicken by poking a fork or by cutting the edge with a knife. If there is no trace of pink, chicken is cooked through.
  9. It should not take more than 10 minutes per side to cook on medium flame, but adjust the time based on the thickness of the chicken pieces you are using.
  10. Take the grilled chicken thighs out and let them rest for 10 minutes before serving.
