Fresh prawns – 250 gms, peeled and deveined keeping the tails intact
Turmeric powder – 1 tsp
Black pepper powder – 1 tsp
Vegetable oil – 4 tbsp
Mustard seeds – 1 tsp
Curry leaves – 8 to 10
Chilli powder – 1 tsp
Dried red chillies – 2, chopped
Onion – 1, small, cut into thin strips
Lemon - 1
Freshly chopped coriander leaves
Instructions
Heat 2 tablespoons of vegetable oil in a frying pan. Season the prawns with little salt and fry them in the hot oil until they are turn pink on both sides. Take them out on a plate and set aside.
In the same pan, add the remaining oil. Once the oil is hot, add mustard seeds, curry leaves, turmeric powder, red chilli powder, salt and pepper. Fry the spices with a little splash of water to avoid burning.
After the spices are sautéed and the oil surfaces on top, add the prawns and sauté them to coat with the spices all over. Take them out onto a serving plate.
For the garnish, heat half teaspoon of oil to the same pan and add the thinly sliced onion strips and the chopped red chillies. Sauté then until the onions turn golden brown.
Garnish the prawns with sautéed onion and chilli mix, lemon juice and top with freshly chopped coriander leaves. Serve hot.
