Potato & Onion Frittata

Ingredients
  • Potato – 4, large
  • Onion – 2, large, finely chopped
  • Eggs – 12
  • Grated cheddar cheese - ½ cup
  • Salt and pepper to taste
  • Olive oil – 4 tbsp
Instructions
  1. Wash and peel the potatoes. Using a box grater or food process with the coarse grating blade, coarsely grate all the potatoes. Squeeze out as much water as possible from the grated potatoes set aside.
  2. Heat the olive oil in a large non-stick frying pan. Once the oil is hot add the chopped onions and grated potatoes. Sauté the onion and potatoes on medium heat until they turn golden brown and soft.
  3. While the onion & potatoes are being cooked, break all the eggs in a large bowl and whisk thoroughly. Season the eggs with salt and pepper but not too much since you will add salt to the onions and potatoes too.
  4. When the potatoes are cooked through season with salt and stir well. Then add the whisked eggs over them. Swirl the pan so that the eggs spread out all over the pan.
  5. Once the eggs seem to semi-set, scatter the grated cheese over the top.
  6. Keep the pan on low heat and cover it with a lid to let the eggs set and cooked through. This may take from 5 to 8 minutes. Keep checking in between by removing the lid so that you don’t end up burning the frittata.
  7. Once the top turn golden brown, remove the pan from heat and take the frittata out on a clean cutting board. Cut it into wedges and serve hot.
