Oven Fried Chicken Drumsticks

Ingredients
  • Skinless chicken drumsticks – 8
  • All-purpose flour – 1 cup
  • Eggs – 2
  • Breadcrumbs – 1 cup (Try using Japanese style Panko breadcrumbs if available)
  • Salt and black pepper to taste
  • Olive oil – 2 tsp
  • Paprika – 1 tsp
Instructions
  1. Wash and pat dry the chicken drumsticks. Season them well with salt and pepper.
  2. Now arrange the breading station. Place the flour in a shallow plate, whisk the eggs in another bowl and place the breadcrumbs in a third shallow plate. Season each of these component with little salt. [I suggest to start with half cup each of flour and breadcrumbs as you may not need the full 1 cup of each of them. This way you can have lesser wastage of food.
  3. Preheat the oven to 180 degree C. Grease the wire rack with oil and place it over a baking sheet. You will have to place the breaded drumsticks on the wire rack and then insert it into the oven along with the baking sheet. This way the chicken will not be touching the bottom of the baking sheet which will turn out evenly cooked crispy chicken drumsticks.
  4. Now take one chicken drumstick at a time, dredge it in the flour and shake off the excess. Then dip it into the beaten eggs and drip off the excess. Finally coat it with the breadcrumbs evenly and thoroughly. Then place the breaded drumsticks on the greased wire rack.
  5. Bake the breaded drumsticks at 180 degree C/350 degrees F for 40 to 45 minutes or until the internal temperature reads 75 degrees C / 165 degrees F on a kitchen thermometer.
  6. Take out from the oven and sprinkle paprika over the oven fried chicken drumsticks. Serve hot with your favorite ketchup!
