Classic Chicken Spaghetti in Red Sauce | Spaghetti in Italian Tomato Sauce

Ingredients
  • Spaghetti – 250 gms
  • Marinara sauce – 1 & ½ cup or more if required
  • Parmesan cheese – ½ cup, grated
  • Chicken sausage – 150 gms
  • Basil leaves – 1 cup, tightly packed
  • Extra virgin olive oil – 2 tsp plus more for drizzling
  • Salt and freshly crushed black pepper to taste
Instructions
  1. Cook the spaghetti as per the package instructions in heavily salted boiling water until al dente i.e. soft but still retain a bite. Make sure to reserve a cup of pasta boiling water before draining the pasta. Set the drained pasta aside.
  2. Fry the chicken sausages in 1 teaspoon of olive oil until brown for about 3 to 4 minutes. Do not overcook. Cut the cooked chicken sausages into bite size pieces. Set aside.
  3. Heat the olive oil in a deep pot and add the marinara sauce. Once the sauce is warmed, add the cooked pasta and toss in the sauce with the help of a tong. Add the chicken sausage and season with salt and pepper.
  4. Tear the basil leave roughly and sprinkle over the spaghetti. Add half of the grated parmesan cheese and give a final toss to coat everything thoroughly with the sauce. Check and adjust seasoning if needed.
  5. Serve your spaghetti in red sauce on individual plates, drizzle some more extra virgin olive oil and sprinkle with remaining grated Parmesan cheese. Enjoy!
