Daliya Khichdi - Savory Bulgur Porridge

- Daliya (Broken Wheat) – 1 and ½ cup
- Green peas – ½ cup
- Potato – 1, medium sized
- Green chilli – 1 or 2
- Ginger – 1 inch piece, finely chopped
- Bay leaf – 1
- Green cardamom – 2 or 3
- Cumin seeds – 1 tsp
- Turmeric powder – ½ tsp
- Red chilli powder – ¼ tsp
- Sugar – ½ tsp
- Oil – 2 tbsp
- Salt to taste
- Fresh coriander leaves – 1 cup, chopped
- Lemon juice – 2 tbsp
- Garam masala powder – 1 tsp
- Wash daliya carefully and soak in water for half an hour.
- Cut the potato in small cubes.
- Heat oil in a pressure cooker.
- Temper the oil with bay leaf, green cardamom and cumin seeds.
- Add the chopped ginger.
- Saute them for a minute and then add the potato cubes and green chillies.
- Fry the potatoes for 5 mins and when they are browned lightly, add turmeric powder and red chilli powder.
- Saute the masala for a minute.
- Now drain the daliya carefully and add it to the pressure cooker.
- Stir well so that the masala is mixed with the daliya well.
- If you are using fresh green peas, then add them now and in case of frozen peas, soak them in water and keep aside, they will be added later.
- Now add water, approx 2 cups. Add salt and sugar.
- Cover the cooker with lid and cook on medium heat under pressure till one whistle is released.
- Switch off the heat and wait till pressure is dropped. Uncover the cooker and give a good stir.
- If using frozen peas, add them now.
- If the water is not fully absorbed, put the cooker on medium heat and stir the daliya.
- If the daliya seems to be very dry add a little water and stir thoroughly.
- Add the fresh coriander leaves, garam masala and lemon juice. Mix well.
- Serve hot.
