Banana Oats Muffins for Weightloss | No Fat | No Sugar | No Refined Flour

Ingredients
  • Rolled oats - 3 cups (about 350 gms)
  • Ripe banana - 3 (about 1 cup mashed), medium
  • Honey - ½ cup
  • Eggs - 2, at room temperature
  • Milk - 1 cup (240 ml)
  • Baking powder - 2 tsp
  • Vanilla extract - 1 tsp
  • Salt - 1 tsp
  • Chocolate chips for topping (about a handful)
Instructions
  1. Preheat your oven to 180 C/360 F and place the wire rack at the middle of the oven.
  2. Grind the rolled oats to a fine powder to make oat flour. Transfer it to a mixing bowl.
  3. Add baking powder and salt to the oat flour and give a good mix. Set aside.
  4. In another large mixing bowl, take the bananas and mash it using a fork. Make sure there is no lump left.
  5. Add eggs, milk, honey and vanilla extract to the mashed bananas. Using a wire whisk, mix everything well until all the ingredients are thoroughly combined and you get an even mixture.
  6. Now add the dry oat flour mixture to the wet banana mixture. Using a spatula, start folding the dry ingredients into wet ingredients with a light hand.
  7. Mix the ingredients until just combined; do not overmix.
  8. Line a 12 cup muffin pan with paper liners and spray or brush them with cooking oil.
  9. Pour the banana oats muffins mixture into 12 muffin cups, dividing equally.
  10. Top each muffin with a few chocolate chips, about 6 to 7 in each.
  11. Bake the banana oats muffins for 25-30 mins in the preheated oven until the muffins are golden brown on the top and a toothpick inserted into the center comes out clean.
  12. Take them out from the oven and let them cool on a cooling rack for 15 minutes.
  13. Your healthy banana oats muffins are ready! Enjoy them in your breakfast along with a glass of milk or a quick snack in the afternoon! Enjoy!
