Andhra Style Chicken Fry | Spicy Boneless Chicken Fry Video Recipe

Ingredients
  • Chicken thighs - 500 gms, boneless & skinless
  • Onion - 2, large, finely chopped
  • Ginger paste - 1 tbsp
  • Garlic paste - 1 tbsp
  • Curry leaves - 7 to 8 sprigs
  • Green chilli - 4, halved
  • Turmeric powder - 1 tsp
  • Red chilli powder - 2 tsp
  • Coriander powder - 2 tsp
  • Freshly crushed black pepper - 1 tsp
  • Salt to taste
  • Vegetable oil - 4 tbsp
  • Fresh coriander leaves to garnish
Instructions
  1. Cut chicken thighs into small bite-sized pieces. You may also use small bone-in curry cut pieces.
  2. Heat oil in a skillet. Add chopped onion and green chillies. Saute on medium for 2 minutes.
  3. Sprinkle curry leaves and continue sauteing onion on medium until it turns light golden.
  4. Add ginger paste and garlic paste and saute them with onion. Let the onion turn golden brown; it would take about 5 mins on medium.
  5. Now add the chicken pieces and stir them in to mix with onion mixture.
  6. Add all the powdered spices - turmeric, chilli and coriander powder. Add salt to taste.
  7. Continue sauteing the chicken on medium making sure all chicken pieces are evenly coated with spices.
  8. Reduce the heat to minimum and cover the skillet. Let the chicken cook for 15 minutes, stir once after every 5 mins to ensure spices do not stick to the pan. Do not add any additional water.
  9. After about 15 mins, remove the cover. Chicken should have been completely cooked by now and oil should have started releasing.
  10. Sprinkle chopped coriander leaves and give one final stir. Dry Andhra style chicken fry is ready!
  11. Serve it as an appetizer or with chapati! Enjoy!
