Garlic Shrimp Udon Noodles Stir Fry | Japanese Udon Noodles Recipe

Ingredients
  • Japanese Udon Noodles – 250 gms
  • Shrimps/prawns – 20, medium, peeled & deveined
  • Garlic – 10 cloves, finely chopped (don’t be shocked, I’m a garlic-lover!)
  • Green onion/scallion – 6 stalks, finely chopped, white & green parts separated
  • Light soy sauce – 3 tsp
  • Oyster sauce (or Hoisin sauce) – 2 tsp
  • White vinegar – 1 tsp
  • Vegetable oil – 3 tbsp
  • Salt to taste
Instructions
  1. Cook the udon noodles as per packet instructions in salted boiling water. I cooked the udon for 3 minutes as per the instructions, then drained the water out and rinsed the noodles under cold running water.
  2. Heat the vegetable oil in a wok. Once the oil is smoking hot, reduce the heat to medium and tip in the chopped garlic. Sauté them for 1 minute.
  3. Then add the chopped white part of scallions and sauté them for 2 minutes on medium heat.
  4. Now add the shrimps to the wok and let them cook in single layer for 2 minutes. Then flip them over and cook for another 2 minutes or until they turn completely opaque. Sprinkle salt to taste to season the shrimps & veggies.
  5. Once the shrimps are cooked through, return the cooked udon noodles to the wok. Drizzle soy sauce, oyster or hoisin sauce and vinegar on top of the noodles.
  6. Stir fry the noodles on medium-high flame to mix up sauce evenly and to let each noodle coat with the sauces.
  7. Finally sprinkle the chopped greens of scallions and stir fry on high to mix everything thoroughly. Your garlic shrimp udon stir fry is ready to serve! Enjoy!
